Ingredients
Beef Spleen
Heavy Cream enough to soak spleen in
Butter
Garlic (optional)
Preparation
Soak Spleen in Heavy Cream overnight
Remove Spleen from Heavy Cream
Place in colander and rinse under running tap water
Discard Heavy Cream
Peal the membrane/skin off of the spleen
It is a bit tricky but it does come with persistence
You can leave it on but it makes the Spleen chewy
Heat a frying pan with butter and garlic if you wish
Place Spleen pieces in the hot buttered pan
Fry until pink is just about gone or goneÂ
Serve
