Crispy Liver and Liver Flour

Ingredients

1 Beef Liver, piece frozen approx.. 12 oz.

Heavy Cream to cover cut Liver (optional)

Preparation

Take liver out of freezer and let sit on counter for 30-40 minutes

Just starting to defrost


Place Liver on a cutting board and cut Liver with a sharp knife

In very thin pieces about 1/8 inch thick or a little thinner


Place in a bowl with a lid

Cover in Heavy Cream or Nut Milk or Nothing

Place lid on and store in fridge overnight

Stir a few times so that Cream will coat all the Liver


Put the Liver in a colander and run cold water over it to rinse off all cream


Place a double layer of paper towel on the counter and layer out the Liver on the paper towel

Place a double paper towel on top and press down to get the moister out


Place Liver pieces on dehydrator rack, don’t let Liver touch leave room around each piece


Place in dehydrator 158° for 5 hours

Make sure it is crispy and easy to snap or you may have to leave it in longer


When Liver is cool eat or if you are making flour place in a high speed blender jug

Blend on high

Check to make sure you have flour


Store flour in a jar with a lid
