Ingredients

1 Whole Large Egg & 1 Egg yoke

1 tsp. Lemon Juice

½ tsp. Salt

1 tsp. Mustard

1 c. Duck Fat Melted and cooled

Preparation

In a small 2c. glass jar add egg, lemon juice, salt and mustard

Using a hand blender blend ingredients together


Then slowly add duck fat and blend between each addition

Mayo should thicken as you are adding the duck fat


Give it one final good blend in a jar

You can use it right a way or seal and place in fridge after cooled.


~ Measuring duck fat letting sit at room temperature until pourable.

~ All ingredients (except the duck fat) are put in a jar and left to sit until room temperature.

~ If you have a bit less than 1 cup of Duck Fat that is fine
