About the Recipe

Ingredients

3 Tbsp. Beef Gelatin

½ c. & 2/3 c. Cold Water

1c. Honey

1/8tsp. Sea Salt

1 tsp. Vanilla Extract

4c.-6c.Rice Cereal (gluten Free)

Preparation

You need a High Speed Mixer I use a KitchenAid to makes these (I have burnt out little ones)


Lightly grease 9x13 pan. Then cover with parchment paper that goes up the sides, grease the parchment paper as well


Put 2/3 c of water in a large mixing bowl and sprinkle gelatin over the water. Set aside


In heavy pot add honey, salt, and 1/2 c of water. Heat on med heat. Use a candy thermometer, bring the mixture to 240 degrees


Start mixer with your gelatin in and add hot syrup into bowl. Put mixer on high and set timer for 10 minutes

After about 1-2 minutes add Vanilla Extract


When there is 10-20 seconds left pour in 4c. of Rice Cereal, 1 cup at a time


(When timer is up quickly adding 2 more cups of Rice Cereal, hand mix well with spatula (optional))

Take out of mixing bowl and pour into your parchment paper lined pan and smooth out quickly. Do not overwork

Leave on counter till next day


Take marshmallow out of pan but leave it on paper, peel sides down

Take a sharp large knife and put some coconut oil on the blade then cut marshmallows, as your knife gets sticky wash off with warm water and re-coconut oil it


Place in a container with no lid and leave on counter for a day.
